Miriam Nwokoro — CEO, Mel Cakes & More | Co-Founder, LCIE
Miriam’s love affair with cake making started at just ten years old, inspired by her mother, a trained confectioner. After leaving paid employment in 2002, she turned her passion into a career — training at renowned sugar-craft schools across the UK, Dubai, and Scotland, including:

Miriam is a pioneer in Nigeria’s cake industry. She founded Mel Cakes & More, a distinct and celebrated brand, and co-founded Lekki Cake International Exhibition alongside Eniye Okoye to give cake makers, manufacturers, and enthusiasts a space to learn, connect, and showcase their creativity.
Her latest initiative, “Ability in Disability,” empowers physically challenged bakers with a platform to share their craft and find their voice.

Okoye Eniye — CEO, Cakes by Somchez | Co-Founder, LCIE
Eniye’s baking journey began in her mother’s kitchen, where she learned the craft under the guidance of her mother, a Home Economics teacher with exceptionally high standards.
Over the years, she has refined her skills by completing professional courses in Sugarcraft, Wilton Decorating Techniques, and advanced baking, earning certificates from prestigious institutions worldwide.
For Eniye, baking is more than a profession — it’s a passion. Her commitment to quality and attention to detail have earned her recognition, including a Special Honorary Award in 2019.
Today, Cakes by Somchez stands as a symbol of excellence, delivering treats that consistently exceed expectations.
